As a vegan, of course the ingredients have changed, but with a little creativity you don't have to be deprived of the traditional breakfast items. Here are a few of my favorite ones.

These are AMAZING! They are best when they are fresh and hot. We have only made them once because they are very addictive. They are vegan and delicious but not healthy by any means :( This recipe was inspired by the blogger Vegan Dad. Here is a link to his recipe.
Vegan Omelette |
I have a confession, I ate two of these the first time I made them! I had not had an omelette in about 5 years and it was delicious.
These are a little challenging to make, but very much worth it. The hardest part is spreading the mixture out in the pan to form the omelette. I added vegan sausage, bell peppers, onions and spinach and topped it with Dayia and hot sauce.
This recipe was adapted from "Quick and Easy Vegan Comfort Food" by Alicia Simpson.
Recipe for Vegan Omelette:
Omelette:
1 Box 12.3 ounce extra firm silken tofu
1 tablespoon tahini
1/4 teaspoon each of onion powder, garlic powder, cumin, tumeric, and curry
1 teaspoon sea salt
2 tablespoons potato starch
2 tablespoons nutritional yeast
2 tablespoons non dairy milk
3 tablspoons of canola oil
Filling:
1/4 diced onion
1/4 diced bell peppers
1 tablespoon canola oil
2 cups chopped fresh spinach
1/4 cup vegans sausage
To make the filling:
- Heat oil in a skillet. Add the onion and bell pepper and cook until soft; about 3 mins.
- Crumble the sausage and cook until brown.
- Add the spinach and stir constantly until the spinach cooks down.
- Remove from the pan and set aside.
- In a blender, combine all the ingredients except for the oil and blend until smooth.
- Warm the oil in a large skillet.
- Pour 1/4 cup to a 1/3 cup of omelette batter into the pan and smooth out with the back of the spoon.
- Cover and cook for 5 minutes.
- Add the filling to one half and fold over.
- Remove from heat and slide omelette onto a plate. Top with vegan cheese and hot sauce.
I have to say these are just as good as the "traditional" version. I made these for my 16 year old niece that isn't vegan and she loved it!
Here are few more breakfast items that I love. My vegan version of the Egg Muffin and Pumpkin Cinnamon Rolls! Just because you are vegan doesn't mean you can't indulge (in moderation of course) in traditional breakfast items. You can even have them for dinner!!!
